What to do about neighbor kid going in coop?

I think you've already received a lot of good advice here, and I strongly agree with ChocolateMouse about documenting everything.

Additionally, don't let your dad walk her out or ever touch her again. If you need to touch her to escort her home, let her escort be female. Don't leave any room for false accusations -- some people are really creepy. Protect your Dad, okay?

The signs are a good idea (locks even better), but with a child, they will not protect you from legal liability (at least not in most states) if anything happens to her on your property. Make those contacts with the parents, police and children's services -- and DOCUMENT everything.

We had some neighborhood kids open all our fences and let out our chickens once. We had a pretty good idea of who it was that did this. Their parents tried to call the cops on us for loose chickens because their own kids were the ones to let them out.

We now keep padlocks on all our gates. We also let the neighbors know we were gonna install security cameras because we were madder'n heck and we were gonna have the next person to do that on video and arrested. Whether you actually install them or not having people THINK you do can make a difference.

In your case though you might actually want the cameras. Heck, even a motion-activated wildlife cam would suffice. It'd show timed records of people walking past it.
 
Naked 8 year old in your coop and guardian shrugging it off?!?!
Call the cops now, just to document all incidences.
Camera in the future, but for now sit down and write it all down as you remember it.
Geez, this makes my blood boil!
That poor child...and her mother with those kind of parents. SMH.
