what to do with duck eggs?

@chickery-do I find it helpful to categorize my duck eggs by size, as we generally get two from our Pekins; Small = LG/XLG Chicken egg. Then Large = Jumbo/Dino Egg, does not fit in an egg carton and is usually double yoked. I save the small eggs for baking and precise recipes, while using the double yoker's for fried eggs, omlets, French toast etc.

If your cheescake recipe needs to be precise, then I'd avoid using the really large duck eggs. Or in a pinch, I would say a 4.6 oz duck egg is about equal to 2 sm/reg. size chicken eggs.

If it had to be precise, then I wouldn't be doing it lol! That's why I love this recipe so much! It should be cold tomorrow, so I'll be giving it a try! :D Wish me luck! With a cherry ontop!
