Dh and I were out running around in the country yesterday and accidentally turned around on a farm that sold fresh butter. I bought three pounds.
What to do with it...?

do the absolute best thing you can do with it... put it on a cracker and eat it!

Or chocolate chip cookies or you could freeze it. I buy it cheap on sale and do that.

anything you would do with normal store bought butter! Three lbs would last about 9 days in my house.
