What to plant in the salad bar? Salad bar pics please!

We did the vine question for chainlink, etc...now what about plantings for the "salad bar" ?

Herbs, grasses, weeds, what works?

In case people do not know "salad bar" refers to an area of ground covered with wire to prevent the chickens from destroying it, but able to peck thru the holes and get the goodies..wire is usually raised a few inches off the ground...if you have salad bar pics, please show them!

clover would be good. Mine go crazy for it.

I'm trying chicory and clover in one bed - these will keep coming back (keep in mind not all clovers are perennial. Also depends on your climate).

In my second bed, I'm trying a "salad bar" seed mix I bought...I'm expecting these to be annuals, but a couple of them might come back the second year.
