What would be the easiest coop to build?

Yes, agreed, basic safety goes a long way. Wear safety glasses or sunglasses, anything to keep the sawdust from blowing in your eyes every time the wind starts to blow. Wear earplugs. Wear gloves when handling materials (old scrap wood is rife with splinters). Also always double check where your second hand is before doing anything, if one hand is on a saw or drill make sure your other hand is in a safe spot.
 
I would be nervous with that set up. We have weasels around here, so the whole thing would have to be covered in hw cloth to keep my mind at ease and that would get pricey I think.

That just depends on how big you make it... and yes if you have weasels 1/2" hardware cloth would be needed and not put on with plastic zip ties attached with hog rings. Did you price it? Looks like $0.70 per square foot for a cattle panel covered with 1/2" hardware cloth. So about $45 per panel... yea that's too expensive you should frame it up and cover it with plywood and siding then paint it.

I actually have acceess to used cattle panels! So that cost would be null.
I also have strength issues in my arms, so will have to weigh the options with that in mind.
