What would the offspring be called of an EE father and BO mother? Would it be classified as an EE, or just a mixed backyard chick? What color eggs would pullets of this mix lay?

Well, it would really be an Olive Egger, and lay Olive Eggs. So kinda like an EE, yes.

I think olive eggers need to have a dark colored egg laying parent, like a marans or welsummer. An orp lays medium brown eggs, the baby would be a mix and probably lay greenish eggs of some shade.
