Whatcha Making for Supper?

Well, I want you guys to know that there are some days you should just stay out of the kitchen. While baking the cabbage casserole, I thought I would go ahead and make the leek and potato soup- well- first, I accidentally turned the burner to high and almost burned the leeks as they were softening in butter. Transferred to a different pan. When I added the potatoes, realized the pan was slightly too small, transferred to a bigger pan. All went well until I put it in the food processor to cream. there was a split in the plastic bowl and the liquid started draining everywhere down the counter to the floor. I grabbed my roasting pan and put the bowl in it, got out my small mini chopper and used that to cream the soup, put a bag in the freezer and made a bowl up for tomorrow and put in the fridge. Have just finished cleaning the kitchen and I am whipped. The cabbage is fine, but I feel more like I have earned ice cream.
 
I decided to make a rustic vegetable soup recipe I found online. It seemed perfect for a chilly winter day and used up a bunch of produce that needed to be used. It seemed a bit bland -- but a strong dose of hot sauce made it just right. Good thing, too, because I have enough leftover soup to eat for the next three days.

I like to take leftover soup, put in freezer. When I thaw it out, it's usually thicker and I put it in a baking dish with a pie crust over it. After baking, you have a great pot pie
