I might look into that. Yeast is normally pretty expensive and goes bad pretty quickly, which is one reason I like the sourdough starter. I also love sourdough, but I like to be able to make different kinds of breads too.
You can store your yeast in the freezer
 
I'm going to do that. One of the things that has kept me from making a lot of different breads is needing to go out and buy yeast. This will keep me baking for quite some time.
I put a few packets in freezer bags but store the bulk of it in vac and seal bags for freshness.
 
The French bread I baked yesterday with 20 month old yeast turned out pretty good for bread machine bread. The yeast has been kept in the freezer since I purchased it.

The French bread setting takes a little over 3 hours start to finish. It cycles through mix, knead, rise, knead, rise, and bake. The bread has a nice crust, in spite of my using cheap all purpose flour.

And I used chicken fat instead of butter or shortening. Maybe that helped. LOL

This is the yeast I bought. I got it March 10 of last year so it's 20 months old. I roll the top of the package down tightly then wrap a few rubber bands around it before it goes in the freezer. The package is foil or mylar.

I thought that the instant yeast would be better for my bread machine. I think there's a "regular" rise yeast available too. I guess the regular yeast takes longer to work, but adds more flavor.

If you have a vacuum sealer it would be very helpful in keeping it good.
