What's for dinner tonight

sorry i'm late i just finished mine and saw this thread. i'm having grilled ham and cheese sandwiches and ruffles, with buttermilk ranch dressing for a dip, topped off with a big glass of iced tea.
now tomarrow i'm cooking fajitas on the grill with onions and bell peppersand what ever sides i come up with. the burn ban is off and i can bbq again.

Seachick, the potatoes were AWESOME and I did use plain russet. My family liked them and they were filling

My oldest ds had his 23rd birthday yesterday. I've always cooked their favorite dinner and cake, etc for their birthdays. He asked for chicken and dumplings, with his favorite, Rice Krispies (he's not a cake person at all).

I even made homemade dumplings, and I put some steamed veggies with it. Good stuff, Maynard! LOL

You're welcome! It's a staple in our house. Believe it or not, I got the recipe from a kid's cookbook and fiddled around with the amounts and technique until it fit our tastebuds. Scalding the milk keeps the sauce from curdling. Also, the sauce works well for potatoes au gratin. I just add more milk to make it thinner. Hope you enjoy!
 
We had homemade chicken soup because Olivia was feeling a little under the weather.

Tonight we're having homemade Pad Thai.

How did you do the halibut? We have an awesome recipe we developed when we were living aboard our sailboat, Zora -and eating fresh-caught fish nearly daily (you can also do it with chicken cutlets pounded thin!):

Fish Chez Zora

fresh fish
lemon or lime
salt, pepper
optional: garlic powder
milk
egg
Panko bread crumbs
oil and/or butter

1) Pat fish dry. Rub all over with a cut lemon or line chunk, squeezing juice all over. Season with salt and pepper. Cut fis into serving-size pieces.

2) Prepare 3 bowls large enough to dip fish pieces in:
first bowl: flour seasoned with salt and pepper, and/or garlic powder
second bowl: beat one egg plus a splash of milk with salt and pepper
third bowl: "panko" bread crumbs (available in many supermarkets' asian-foods aisles)... regular bread crumbs and/or cornmeal is OK but Panko makes the most AMAZING crispy crust!!!!!

3) Heat a large skillet on med-high with oil and/or butter. Dip each piece of fish in flour, shake off excess, into egg wash, then roll in panko crumbs. Saute until done and golden brown, about 2-4 minutes per side depending on thickness of fish. If you need to work in batches, keep fish warm in preheated 300 degree oven while you finish.

Serve with lemon wedges and homemade tartar sauce:
mayonaise
sweet relish
chopped onion
salt and pepper
splash of lemon juice



Serve this with the potatoes, and MAN: super yummy!

Well, tonight we are having a Chicken New Brunswick Stew, it has chicken, potatoes, corn, and the seasonings we like. I make it in the crockpot, and it's oh so easy!

Anybody have an EASY recipe for chicken n dumplins?
