What's the best way to store eggs

    If I only get a handful a day and am saving for family members, what is the best way to store them? At room temperature or in the fridge. If at room temp, how long can they stay out?

    I use the eggs I collect over the weekend throughout the following week. I keep them in a basket on my counter top. Eggs will keep well for a couple weeks without a refrigerator. The bloom on them helps to protect them. So, I don't wash mine. Room temp fresh eggs are much better to cook with. It really does make a difference.

    If I am going to give or sell eggs I will refrigerate them. If they happen to be messy I do clean them off.

    There really is no right or wrong way.

    Do to food regulations the gov't will always opt out for the 'keep refrigerated and get them in ASAP' method to prevent frivilous lawsuits.
