What's the longest it's taken for an egg to hatch?

I have had eggs hatch at day 19 and day 24 currently I'm at day 28 for some that also hatched on day 19 but most of these were in the refrigerator... I had one of the refrigerated eggs hatch already im so tempted to give up but I just seen some eggs hatch at day 31 or more... I know there is a birdie in these whether or not they can hatch? I'm also struggling to figure out why so many hatches are different my first with this incubator was 4 hatched out of 12. Idk if the other eggs were fertilized. I know 2 where they pipped and gave up. The next hatch I had 12 fertile eggs 11 hatched and 1 died giving me 10. Wow! This last ones only 5 so far and 5 with a different incubator. This incubator has no humidity monitor I literally kept adding more and more water the time I got so many to hatch but the eggs were already pipped. Am I drowning them if the eggs aren't pipped?
