Trying to eat healthier

Not by changing too much, but by eating more salads..
Here's it's either a garden salad, or potatoe, or mac sald.. Yes I know the later aren't that healthy..

This summer we tried a corn type salad with a vingar dressing.. That was nice..

But what are your fav salads? I think we are so lucky to have people from all over.. There must be some types of salads i know nothing about.

Please tell me what you love in or for a salad..
Thank-you

This sounds interesting, Not too sure if, it's something I will love, but for sure an gonna try it.. Thanks for sharing :) Think my hubby, will love this one though.

So nice to have new things to try, Were only in our early 30's here, but so bored, with the same ol same ol for food!!

Our favorite is a Chef Salad with homemade Thousand Island dressing. There are so many variations you can make a different one every time. My favorites are grilled chicken breasts with bacon and boiled eggs. Or the little salad shrimp with shredded jicama.

Meatking, get the fresh Mozzarella and cut it into slices. Add some basil leaves and a little olive oil to the ingredients listed in my first post. It is so good - the onion is optional.

I make the bean salad and mix it with half a packet pasta (cooked and chilled), a tin of sweetcorn and a tin of tuna and some mayo for a nice cold summer meal.

Tomato, cucumber and basil tossed with olive oil, minced garlic, s+p and feta cheese.

and of course taco salad. So what it's a million calories but still a salad.

Wilted Lettuce Salad
(now, I like mine with baby spinach but I grew up eating it with fresh lettuce out of the garden)

Leaf Lettuce - rinced and torn into bite sized pieces
or
Baby Spinach

4 hard boiled eggs, sliced

For the Dressing:

Stir together: 1/2 cup sugar, 3 Tablespoons of flour, 1/4 tsp salt, dash of pepper and 1/2 tsp dry mustard. Make sure it is mixed completely or you will have lumpy dressing.
-- Add 1/2 cup Apple Cidar Vinegar and 1 cup water, stir well.
Dice 6 slices of bacon and fry until crisp. Pour in the sugar/vinegar mix and cook until thick. You can adjust the sugar/vinegar ratio to taste.

Pour hot dressing over spinach and stir it in untill all the lettuce is covered. It will wilt slightly.

I also like to add sliced fresh mushrooms and thinly sliced red onions to the lettuce before pouring on the dressing.
