I make a quiche at least once a week. This is my fav recipe: https://www.recipetineats.com/crustless-quiche-ham-and-cheese/
Yum! I like frittata's too, just not a big crust eater. I usually put some kind of cheese and what ever veggies I have that need to be used. I keep a bag of those bacon bits from Costco in the fridge, they add a nice flavor without the mess of cooking bacon.

If someone comes up with tried & true spicy pickled egg recipe, please share!

I made a "cheesy grits casserole" the other day from a recipe on the side of the grits package. It was really yummy and my husband (from up North) even liked it! It calls for 3 eggs and makes a kind of fluffy-like soufflé. It makes enough to feed 6 people easy.
