When can I be sure my hen is not rooster?

This is entirely new territory for me.

So he'll be "servicing" all the girls (6 of them) and they'll begin laying fertilized eggs. ...some day.

Then???? One day one of them will decide to gather a clutch of eggs together and brood them?

As others have said, the hen will go broody when her hormones say so. It has nothing to do with a rooster being around. My first year, I had no roosters, and my silkie still went broody. So we gave her eggs to hatch.

If he were to "service" the year old hens would they get broody now as the days are already getting shorter?
Doubtful that they'd go broody now, but it's always a possibility. Depends on where you live and lighting conditions, etc.
As for wondering if an egg is fertilized... I don't personally have any good pics, but if you search the forums on here, there are lots to good pics and explanations.
 
My girls didn't go seriously broody until this summer. One group is over 2 yrs old the other group 8 months old and j had one go seriously broody couldn't break her for long kept going back broidy so i let her hatch one hatched out of 4 baby is 4 weeks old now
