When do turkey poults start to roost?

Well, bit the bullet and got 3 Red Bourbon poults from my chicken person (He has a feed store). They are 3 weeks old now. I saw one of the little birds sitting on top of the waterer in the brooder. At what age do they start to roost? And when can you tell if they are a "He" or a "She"

Ours started roosting before they really even started to grow feathers. We have the white turkeys, wild colored ones, and slate. The boys are just starting to grow beards now they hatched around the end of April. I'm sure there are quicker ways to tell the gender, hope this helps!

I think it is about 4-6 months old
