I just rescued an americauna, who is about 2 years old. Is there any chance she will still lay?

There's a good chance she will still lay just not as frequently as younger birds.

Any idea if there would be an "acclimation" period before she starts to lay after being introduced to the new flock?

She will probably not lay at first. Moving is stressful for chickens and they don't lay well if they are stressed. Give her a week or 2 to get used to her new home.

You should keep her quarantined for a month at least before introducing her to you flock, just to make sure she's not carrying anything nasty like mites or disease. It would be good if you can place her somewhere where the others can see her (without making contact) and get used to her in the meantime. Then she won't be an "intruder" when the time comes for her to join them.
