When is a turkey too old to eat? -edit- what breed of turkey is this?

I think the palm is a hen (jenny), in some of the pictures the Bourbon does have his snood extended somewhat. The palm... the caruncles look a bit heavy for a hen in some of the pictures. Do you have any close up pics of just the heads? Or you could try talking to them in a high pitched voice and see if they display and gobble at you. If any of them gobble, it'd definitely a tom (jake). Not all tom turkeys have snoods, some get picked off by other young poults when they are small, some are hatched without. The palm looks like there is a tiny snood bump there, but... in some of the pictures it looks kind of masculine IMO.

both hens, one bourbon red hen,and a royal palm cross, some hens will strut we call them butch hens, they will not gobble!!! tom!!!!
 
We are picking them up next weekend (frantically trying to finish our coop and run this weekend

) The bourbon definitely seemed more strutty/showy than the palm, but I dunno. They were both very friendly. I didn't get a decent up close picture, so I will try to when I pick them up next weekend. Neither are egg laying yet, that I know of (the owner lets them free range and hasn't noticed any yet). I'm not sure if they would be laying yet or not, they are just almost one year old...

Thanks for all the opinions so far, although it sort of sounds like a toss up, lol! Someone mentioned the Royal Palm looked like a mix, so does that mean I shouldn't bother trying to breed him/her? I was hoping to sell some fertile eggs or poults...
