When to cull, and how?

Courtshep, I have killed birds in many ways, depending on the situation. If they are young friers I just wring their necks, if older I chop, but I've been reading on the method where one stabs a sharp knife at the base of the skull. The head would have to be immobilized quite a bit or I would probably end up stabbing my hand!

They probably use a butchering cone for that method. My grandmother used to tie them to the clothes line and cut their heads off with a sharp knife. I don't own a blade THAT sharp, so I've been using the axe and block lately. Or....you could have some big strong man do it where you won't have to watch!!! THAT would be the ideal way!

BeeKissed do you skin them or pluck the feathers? We have dressed out meat birds but not in two years and I haven't done any of my young Orp cockerels but I hear they are great table fare. I have a few that I might try in another month if we don't keep them.
