When to incubate dilemma?

Due to poor hatch rate with our last batch of quail eggs as a result of them not being fertile the seller has agreed to post some more for free providing I pay postage. Problem is she can only post on a Monday which results in a weekend hatch if I put them in the bator the day they arrive. We might be going away the next couple of weekends they will be due to hatch so would rather time them so they hatch at the beginning of the week. If the eggs arrive on Tuesday can I delay putting them in the bator until Thursday??? I realise it depends on age of eggs, and seller said they are no older than 7 days old when posted. Would it just lower hatch rate for some of those eggs a bit older? Fertile quail eggs are hard to come by where I live so don't have much option but to accept her offer.

Two days should not matter just be sure to store them in a cool place pointy end down. Turn them after 24 hours. I do this by putting a block under one end of the box/carton so the eggs are sitting at a different angle. Shipped eggs should be left to "settle" a day before they go into the incubator anyway.
