When to stop turning?

This is not my first time incubating, but every time I get confused about this. I read somewhere that you have to stop turning the eggs three days before they are expected to hatch. That would be day 18. So would I turn on day 18 and stop on day 19, or would I turn on day 17 and stop on day 18?

You could turn on day 17 and then do not turn after that.
If you do turn on day 18, it won't hurt anything.

Another question. The temp in my incubator is fluctuating between 97 and 100. It sometimes settles on 99. Will constant temp fluctuation affect the growin embryos badly?

Temp seems okay.
If it drops below 95 or above 102 for a period of time, I would see what's wrong.
Make sure the room the bator is in keeps a stable temp.
