When to throw away unhatched eggs, and what to do with them?

We got 15 or so eggs they haven't hatched yet but I am unsure how long you can let them sit until you eat them and I think most are between two and three weeks.

You would certainly not want to eat eggs that have sat in an incubator for 2-3 weeks! Unless you're going for balut
