Chickens have trouble breathing on their backs especially the meaty ones, all their innards smoosh their air sacks (lungs) and they slowly black out. Which is why they get so calm when you cradle them. When I was little I could turn chickens upside down and stroke their breast bone and they'd go to sleep. I haven't been able to do that with my new pullets, but I haven't really tried either because I felt bad for them. lol
My favourite (the one who is most tame) now comes running if I pick up any other and loves to be picked up herself. She likes a neck rub or a cuddle while I stroke her back, or playing with the feathers that cover her ears. Lots of things really. She is a real sweetie.
