Which breed would be best for me?

Pilgrims are much more wide spread and are wonderful geese! they tend to be a litter larger and don't have the patterns you see on Shetlands. (Usually considerable cheaper too)
 
I would do the American buffs. They are very good layers and broodies. Make great parents. Grow quickly with little extra food as long as there is a nice ample supply of grass are not noisy and dress out nicely. The gander may have some space that he considers as his and even gives you trouble when you enter it (nesting area comes to mind), your little boy needs to know to stay out of that area.
Pilgrims are my favorite goose, fairly docile, but not complete wimps!
