Wash and cut off nails. Simmer in water and garlic (I use minced) for 1.5 - 2 hours. You can simmer them for 15 and remove skin if desired, then return to pan.

Remove and pat dry. Dip in egg and then seasoned flour, deep fry until golden. Sprinkle with a bit of salt while still hot.
