Do you do a crumb layer first? A nice sticky layer of icing should help those crumbs stuck to the cake once you spread the second layer on.Good afternoon I have a question for the ladies if yall don't mind if you do that's cool too I'm just at my wits end. So pretty much every time I put icing on a cake whe I lift whatever I'm using to spread it with it pull a little of the cake with it. My wife suggested putting the icing in the oven turned off of course while it was still warm. I've tried that it works but only to a certain degree. I always wait till the cake is totally cooked cause she doesn’t and melted icing is repulsive to me. I am out of ideas and I really really want to have icing that isn't infected with little dots of cake. I know what you're going to say " it's just a cake you're gonna eat it anyway " and yes that's true but the perfectionist in me just wants to have a beautifully iced cake that I can be proud of and not embarrassed by. Like let's say we are invited to a gathering and I am tasked to bring a cake? What then? What then people? Buy one from a store on the way but then it's........ nevermind I'm getting too emotional ill just leave everybody alone forget I asked

By the sound of it, when you lift the spatula/knife away, it brings a patch of icing infected with cake, yes? To prevent this, remove the spatula by drawing it away horizontally, scraping the bottom gently against the edge of the cake. Not as dumb as you might think. If whatever computers the files are kept on crashes, then you're out of luck, not to mention the fact that staring at paper is easier on the eyes than staring at screens. I've found that it's less tiring, too.Probably. But due to some regulations we are legally obligated to have hard copies. Duuuuuuuuumb
