i think my chef would quit on the spot if i came home with a deer in the back of the truck for him to deal with.

Does striking a body at high speed not do something that could potentially cause the meat to be inedible for human consumption? What if the liver or kidneys burst on impact, or any other icky organs that release bad things into the meat? And a stressful death usually makes meat tougher, yeah?

Most of the time it turns the meat to jello. Some people will eat that. To me it's only fit for scavengers.

I don't take vehicle stricken deer unless it was in the head or legs.
