So I've expanded a bunch recently and I'm very curious about if I should hatch eggs from them next spring and would anyone buy them.

I would 100% buy chicks from your second rooster and celosia.
I'm from florida but I'm moving to NY in the next two years, if you would be able to do that pair, i'd buy around 10 chicks (hopefully mostly females) to pair with the ayam cemani rooster i'm getting
