Trying to find the documentation that specifies you are allowed to have chickens if you have one acre that meets the unplatted subdivision definition. What is the law that restricts those with less than one acre from having chickens and/or allows the county or township to do so?

Possibly a right to farm law? One acre is pretty small for right to farm, in general, although there is a wide variation in protections from one state to another. Michigan's is the most comprehensive and protective of farming rights. It lists no minimum amount of land. You will have to check your ow state statutes to see how protective it is/isn't.
