Which ones to slaughter for the 4th?

I have some CXs, I am not sure I have issues w/ toughness or not. I need some birds for my dad's 4th of July party. My birds range in live wt for the roo's 7-10.5 lbs and 6.5-8 lbs for the girls.

Which are going to be the best for fried chicken? What would be best for a whole beer butt chicken? WHEN is the best time to slaughter for cooking late morning on the 4th? I am over thinking this!

Ali-if you planning on having them for the 4th Id butcher now-they need to sit and rest in fridge for a few days to allow rigor and relaxation of tissues....Any of them would work-shoot for the biggest ones first-that way your smaller ones will have some more time to grow:)
