Which rooster to eat?

I start by removing the most bold, and forward birds personally. Generally the best are not as forward, and not the dominant bird. I prefer young roosters to run away. Those that come up to you will often attempt to attack later on when hormones kick in more. I don't like young roosters to be too friendly.

They are your birds, keep what you like.

That makes a lot of sense. Thank you!

I say keep the RIR ... he will make bigger tastier babies ...

But ... we/I don't really know why you even want to keep a cockrell/cock ... Pretty? Cuddles? Make babies? Warn of predators? Hear the crowing? ... Other???

I didn't expect to want to keep any cockrells but thinking more about it, we live so very remotely that some flock protection might be nice. We have big cats and coyotes on the ranch frequently. No neighbors to speak of and the coop is far enough away from the bedrooms that I'm not worried about the crowing. If Snowball turns into a jerk, he'll go to freezer camp too.

If you want your flock to have the easter egg genes, then save that rooster. Eat the Red.

If you want your flock to be dual purpose, then save the Red. Eat the Auracana cross.

If you are not breeding, eat the Red at prime roasting meat stage and save the other for a later stew.

If you want a pet, then keep the one you like the best and eat the other one.

Cock/cockrells "tend" to be more observant ... this is there largest roll in "protection" ... telling the pullets/hens to go hide ... while he may go toe to toe with a domestic cat ... a coyote will just eat him first!
