white skin meat birds

when poultry places sell white meat birds is it usually a cornish, cornish x or something else? I know nothing about meat brids lol

The birds you get in the store are Cornish X's, which are technically yellow skinned. However, when they are scalded, the yellow rubs off and you're left with white skin. To keep them yellow, one needs to scald at a lower temperature. There are birds with white skin, but they aren't popular as meat birds in the US.
