The only problem is that the non layers are impossible to catch

The brown eggs were laid by what ever hens you have that have RED earlobes. Strains and their crosses who have white earlobes lay white eggs.

Here are two different hens that lay different colored eggs. The first hen lays a brown egg while the last hen lays a white egg. Note the different colored ear lobes.

The only problem is that the non layers are impossible to catch

That's why I perform exams after dark when the birds are very easy too catch while sleeping on the roost but I have a walk-in coop where roosts are easily accessed.
