I hang mine for skinning. Its easy.
Cut at the neck (you are going to do this anyways to get at the crop. One hand secures the bird, other hand goes up along the breast line, just off to one side then around towards the back. Same on the other side. With young birds, its very easy. Older birds, you may need to snip or cut that tiny bit of connective tissue that runsfrom the center of the thickest part of the breast to the skin. Once you have some space to work, start a rip in the skin near the thigh area with the loose skin. Peel down and away from the bird, disroping it down the wing. Quick knife work to remove the feathers at the edge of the wing. Repeat other side.
Pull the bird off your hook/hanger, remove the feet. now pull the remaining skin down each leg and off. That should leave some tail feathers on the "pope's nose". Chances are good you can simply rip those off.
Now do your cavity work as normal. Older birds tend to have tougher connective tissues, including the skin, may need more knife work to start tears in the skin, or to remove at the wing and the connection points along the thigh.
Dry hands are best.
