Who to keep, who to 'process'

I started with a mixed straight run from M.McMurray. All kinds of dual purpose heavy breeds so I could see which type I liked, then narrow down to a few kinds. Out of 25 surviving chicks, 15 were roosters. I'm down to Buff Orps, Speckled Sussex and one BLRW. I now know the BLRW from McMurray is NOT something I should be breeding, but he's pretty anyway and very submissive. I've added some purebred Welsummer's from a breeder and definitely want to focus in on those as one of the breeds I keep.
How do choose between these last 7 roos that I really like??? Tough decision and the processor comes on Monday!

Oh, in addition - I've got a big beautiful SS hen and two roos. Which one would I keep for her, the biggest and more dominant or the smaller so he won't beat the *$%# out of her? Got the same situation with the Buff O's.
