Whoa...are turkeys harder to process than chickens?

Someone in an earlier post mentioned something about giving turkeys a little red wine beforehand, so they wouldn't be so difficult to manage.

My DH walks up behind them and shoots them in the head with a .22. No rodeo. No getting beat up by a 60 lb. bird. Shoot them, hang them upside down, pluck as much as you can as quickly as you can while the bird's warm, then you only have to scald a little for the remaining feathers.
