Whole wheat bread recipe wanted.

Im just having a ball with my bread machine, and havent bought a loaf since buying it. I now mix it in the machine and bake it in the oven. The loaves are really yummy, but Id like them just a bit moister. Does anyone have a good whole wheat recipe that you consider a little bit moist?

This is a light whole wheat recipe from Beth Hensperger that my family enjoys. It make 2 pounds.


1 1/3 cup buttermilk
1 large egg
2 1/2 TBSP vegetable oil
3 1/4 cups bread flour
3/4 cup whole wheat flour
2 1/2 TBSP dark brown sugar
2 tsp salt
1 TBSP yeast

Dough ball will be moist.
 
Thanks, Ill try that one. Can you make it with more whole wheat, do you think?
 
Try this one, it has more whole wheat and is also very good. Makes 2 lbs.

1 1/2 cups buttermilk
3 TBSP vegetable oil
2 1/2 TBSP dark brown sugar
2 cups whole wheat flour
2 cups white flour
3 TBSP vital wheat gluten (I don't use it)
2 tsp salt
1 TBSP bread machine yeast (or 2 1/2 tsps SAF)

Thanks for the recipes and I didn't even ask for them. The King Arthur one looks pretty good.

On top of the brooder makes a good place for the dough to rise.
 
Adding extra gluten will make your whole wheat bread less heavy. This is the recipe I use:

1 c water
2 1/2 wheat bread flour
1 1/4 tsp dry milk
1 tsp salt
1 1/2 tbsp butter
1 1/4 tbsp honey
1 tbsp gluten
2 tsp molassas
2 tsp yeast

It's recommended on wheat bread to knead it an extra time. My machine does this automatically when I set it on the wheat bread setting. If it doesn't, after it goes through the first knead cycle, reset the machine and start again.
 
You know, I never even thought of setting the bread machine on whole wheat. How stupid can I be??

Debakadeb, is that recipe for whole wheat bread, or just wheat bread? IVe started adding wheat gluten to every loaf I make, I think it really makes a difference.
