Why do I have so much variation in egg color?

I don't know. We asked for barred rocks (adults), they gave us RSLs and a leghorn, and they told us that they gave us rhode island reds. They all have similar coloring, and are definitely more of a red color than a golden color.
I was just curious if an RIR x White Leghorn red sex link would produce a differently toned egg, on average, from an NHR x White Leghorn red sex link, as example - but it sounds like you have no such certainty of your layers' types.

I'd assume that they're from RIRs because of their dark feathers, but I have no way to tell (unless those DNA tests tell breed??)

No, those are shell eggs for sale. Its probably a double yolk - a number of the birds from my breed project are old enough they should start laying, if they haven't already. New layers often have "problems" while their plumbing works its kinks out.

P1-02 are now 23 weeks, one ("Pretty Boy") is my new top Roo, and my only currently desired breeder. I have one more bird, a pullet, from that hatch who I now know to be laying. The hens from P1-03 were born Feb 23, exactly 15 weeks ago, and should start laying "soon" (1 week to 9 weeks +/-) - at least, the ones who didn't have Brahmas for mamas.
I can't help but notice the one GIANT egg in the middle of the bottom left quadrant and Oh my gosh that is HUGE
are you going to try to hatch that one?
