Why does a chickens crop get full?

It was common practice a hundred years ago to feed chickens on range and only twice a day.
Water was made available at all times.

The rest of the time they were to fend for themselves on the provided range. Clover and alfalfa were prominent forage crops for chickens and, of course, any insects as they could uncover.
