Why the heck does my chicken lay blue eggs

Ameraucanas lay blue eggs and are bought from breeders. Hatcheries sell Easter Eggers and call them Ameraucuanas (Essentially a mutt Ameraucana) and they can lay brown, pink, blue, or green eggs. Hope that helps.
 
That is one of several breeds known as "Easter Eggers" These breeds lay eggs that range from light green to pink, to blue.

Chickens lay eggs in several colors depending on the breed. The most interesting eggs I have seen have come from a breed that lays very dark brown eggs that are almost a chocolate color.

The egg color has nothing to do with the taste. Eggs taste the same no mater what color they are.
