will 9 month old white rock roosters be tough or good to fry?

i searced 'brine' and it brought me to a few pages. Heres the recipe I followed and kinda cut it in half. I also added some garlic salt and didnt have Lee Roys Seasoning
2 Gal Water
1 Cup Table Salt
3 Cups Brown Sugar
1 TBS J. Lee Roys Cookin Seasoning
4 TBS Black Pepper
1/4 Cup Molasses

Edit: I originally wrote garlic sauce,,,,,its salt (not sauce) Ive corrected myself.
