Will a nearly adult rooster recognize which chicks are male and which chicks are female when it's time to combine them?

Only had that work here once, mature cock left the girls alone until they were 'ready'.
All the cockerels started harassing the pullets at about 12- 14 weeks,
right before they went into the freezer.
