Will it be a good one?

It will not be a Cornish X or even a red broiler but it should make a nice meal, especially if you like breast meat. Sounds like a good effort to me.

There are different ways to make white, either with recessive white or dominant white. I don't know which was used on the White Cornish you have access to so I don't know what the chicks will look like with a red broiler rooster. They might all be white, the males might be white and the females red (not likely but possible), or they could be any color/pattern imaginable. With white there is no guarantee unless you know the genetics of that individual bird. If you pluck instead of skin a white or buff bird will give you a prettier carcass than a dark bird. With a dark bird the pin feathers show up a lot more. There are not any fewer pin feathers, you just can't see them. If you get lucky and get whits chicks the carcasses can look better. To me that's the only difference.

Not all White Cornish are created equal. Not all Dark Cornish are created equal. A lot depends on the breeder and what they are breeding for. If you can see the parent flocks before you get the Cornish and see a difference int he parent stock you might get a better meat bird. But if you are ordering them blind, it's just a matter of luck. Other than possible feather color there is no advantage one way or the other.
