I want to give her an egg, maybe 2 if one isn't enough. Can she get broody and hatch just one egg?

Most hens are quite happy to sit on one egg or many eggs. Some hens will even sit on an empty nest. Yes, a hen can hatch just a single egg.

There is not much you can do to encourage a hen to go broody, but having a few fake eggs in the nest may help a little. (Fake eggs are handy for this, because they do not rot the way a real egg would if you left it sitting around for weeks or months.) If she does go broody, then you can replace the fake eggs with the egg(s) you want her to hatch.
