I am planning on building my coup 10x10 with a shed type roof and wanted to put 2 - 30"x48" windows in it, do you think that will be too much light for in the coop

Not at all.
I have 5 windows in my 8'x16' coop; @three 16"x60" and two @ 22"X32".

Install them top hinged and put large overhangs on the roof all the way around and you will never regret it.
 
I’d be sure that the windows don’t heat up the coop interior due to sun and coop orientation. Also, if those are your only means of ventilation, you need to make sure the birds are not going to get rained in, etc.
 
Light and air are good -- unless you've got the wind blowing across the roost when they're sleeping.
Mine do! And right now they love it. Then when it gets cold, I close the windows around the roost.
 
IMO no such thing as too much light, as long as heat isn't an issue (lots of ventilation will take care of that). I have 5 windows in my 6x10 coop, three are 3x3, two are 2x3. I kinda wish I added another window on top of that, would be nice in winter gloom.
