Took these before it started getting cold

Don't cover any more. You need ventilation. How many chickens are inside?? If you smell ammonia inside, you will have to increase ventilation.
If you are in Dallas, the temps should not be that low yet. The chickens will grow down for the coming cool/cold weather.
Offer your chickens some energy food like cracked corn. I know many Science Diet Chicken keepers do not suggest corn. The way I look at it.,,,,,,,,. If it makes chickens warmer with eating extra carbs, I will do it.
WISHING YOU BEST,,,,,,,,,,,,,,,,,,,,,,,,and :welcome

Also, what breeds of chicken do you have? Many are cold-hardy, but some aren't. The current covering looks like plenty.

Actually, I'd cut out a 1ft tall window in one section (away from the prevailing winds) for the chickens to look out on the world. It would be nice if those large plastic sheets were really clear, but I have yet to find any like that.

Good job with the furring strips. They will hold the plastic much better than just staples.

The shivers could've been from being scared. The plastic will make sounds and scare them if this is the first time you are using the plastic. It could also reduce your egg production, if your egg production goes down, you know the weren't shivering from cold but from being scared.
They laid eggs veary good and we made sure the plastic did not flap
