but... if I dig them up, say today, and keep them in the coop's planter, will they continue to grow? Will the peppermint? It'll be kept at no lower than 50 degrees or so at night, but much warmer during the day. If so, that'd be great, since I know they like them already.
 
Plants, like chickens, are more responsive to light than to temp. So I wouldn't plan on anything actively growing over the winter unless you invest in a 400 watt grow bulb to suspend over them, on a timer :p Likely cost prohibitive! Those suckers use a ton of juice.

What I try to do is grow as much as possible herbs and greens like kale and pak choi, that are hearty during the winter, they stop growing but if you have a ton planted you can harvest them daily and bring them to the chickens. Even if kale freezes overnight you can wait for it to thaw, pick it and it's still fresh and good to eat. Depending on how cold it is whee you live, a little plastic sheeting over a garden can extend the season immensely.

Alternately if you want you could grow sprouts indoors over winter and deliver them to the hens, they are a favourite treat of mine and very simple to grow, no artificial light required and very high in protein. You can sprout lentils, barley, sunflowers, peas, etc.
