would chickens spit up into 2 different coops

You may notice you've already gotten different answers from different people. That's pretty normal when you ask questions about chicken behaviors, we experience different things.

Chickens are creatures of habit, it's very possible you can train them to go to different coops at bedtime. Growing up on the farm most chickens slept in the coop but some slept in trees. The coop was big enough for all of them but they got to decide where they wanted to sleep. We had one rooster, about 25 to 30 hens, and several chicks of various ages in summer/fall. That tells me that they don't all have to sleep together.

I have a grow-out pen and a shelter in the electric netting area where I often keep younger chickens. I usually have to train them to sleep in the main coop when I want them to move, but they are still fairly young when I do that. I let them range together during the day. But I have had some fairly young broods move themselves into the main coop. A couple of times I don't know why they moved, maybe they wanted to roost and the shelter did not have roosts. One time I know an owl scared them. So it is possible that they may all want to crowd into one, even if you try to train them to sleep separately.

To me it's one of those things that you can try it if you want, it might work or it might not. If you can, I think you will be better off building one big enough for all of them and using the other one for future integrations or as a place to isolate one of more chickens from the flock if you need to.
