Would this Chicken be safe to eat?

We are cleaning out an elderly friends freezer and in the back I found a whole frozen chicken, it was given to her by the neighbors who raise and butcher there own birds (they have for years)

The date on the bag was Nov 2006, it's been frozen the whole time and theres no freezer burn, but will it be safe?

I'd like to cook it up for chicken enchiladas but is it too chancy?:-(

If it was vacuum sealed it will still be good, not sure if otherwise packed.

Chickens and other meats can be left in the freezer for up to 1 year. If it's in there 2 years it's still OK to eat, but it may be tasteless.

I thawed it and right now the pressure cooker cooling.

The chicken looked good and if I hadn't looked at the date It could have been bought last week, so I guess I'll chance it plus I've already got my enchilada sauce made and ready to go so If this is my last post you'll know why! Wish me luck and thanks.
