Would this work as an incubator?

I bet it would work great. You would ofcourse have to find out what the proper incubating temp is for Celcius as well as provide for proper ventilation.
 
My only concern would be the power consumption. And how well it would hold humidity.
 
It will definitely hold the right temp, which I think is somewhere in the mid 30's... but my big concern is ventilation. You'll have to do something about that, and that will throw off your accuracy rating.

You can take care of humidity on your own. Of course for free, go get it, hatch a couple of cheap eggs in it and see your success rate.
