One of my children unknowingly fed my laying hens the medicated chick start I have for our new chicks. Will this effect the eggs they lay in regards to human consumption?

Nope, should be no problem at all. Most medicated chick feed doesn't actually have 'medicine' in it. It contains a thiamine blocker to prevent coccidia from developing in their systems.
